The project aims to elaborate sustainable business models across the HORECA value chain on an academic level by the University of Brescia. 

During living lab sessions, these business models will be discussed with companies and stakeholders of the HORECA value chain following a business CANVAS approach to fine-tune them and to evaluate their application in the everyday business.
